Garlic Wilted Greens

A quick, nutritious side that works with almost everything — chicken thighs, lamb shoulder, pork steaks or a simple bowl of barley pilaf. Gently sautéed garlic brings warmth, while the greens stay vibrant with a little bite. It’s a two-minute pan job that instantly makes a meal feel fresher and more balanced.

INGREDIENTS
  • 300g mixed greens (kale, spinach, cavolo nero or spring greens)
  • 1 tbsp olive oil
  • 2 garlic cloves, thinly sliced
  • Pinch of chilli flakes (optional)
  • ½ tsp sea salt
  • Black pepper
  • Squeeze of lemon juice or a splash of cider vinegar
METHOD

  1. Prepare the greens: strip any tough stalks from kale or cavolo nero. Slice the leaves into ribbons. Spinach can go in whole.
  2. Warm the olive oil in a large frying pan over a medium heat.
  3. Add the sliced garlic and cook for 30–40 seconds until fragrant but not browned.
  4. Stir in the greens, coating them lightly in the garlicky oil.
  5. Add sea salt and pepper, plus chilli flakes if you like a little heat.
  6. Cook for 2–3 minutes, tossing frequently, until the greens are wilted but still bright.
  7. Finish with a squeeze of lemon or a dash of cider vinegar to lift the flavour.
  8. Serve immediately — these are best eaten hot from the pan.

Multi-Cooker Option (Ninja Foodi MAX)

  1. Select Sauté → Medium.
  2. Add olive oil and garlic; cook briefly until fragrant.
  3. Add greens, salt and pepper.
  4. Sauté for 2 minutes, stirring often.
  5. Finish with lemon or vinegar and serve.
