We’ve teamed up with North Yorkshire farmer, Charles Ashbridge, and Taste Tradition butchery director, James Wright, to select specific cuts from single breeds that we will offer to our SteakHolder members.
Each cut will be selected for it’s quality, texture and breed attributes. The conformation of the animal will be taken into account when making these selections
Some primals will be broken down into steaks and joints as requested, others will be offered whole. On whole offerings you will be able to decide how long you would like it ageing and how you would like it preparing before being delivered.
We will be on hand to offer advice at all stages of the process.
