Cowboy Pie (Kid-Friendly Sausage & Bean Mash Bake)

A childhood classic that never goes out of style, Cowboy Pie combines sausages, baked beans, and mash in a warm, comforting bake that’s simple, budget-friendly, and a guaranteed crowd-pleaser. Ideal for family dinners or batch cooking for the freezer.

INGREDIENTS
  • 8 pork sausages or chipolatas
  • 1 tin baked beans (400g)
  • 1 small onion, finely chopped
  • 1 tsp mild paprika (optional)
  • 1 tbsp ketchup or BBQ sauce
  • 400g mashed potato (pre-cooked or freshly made)
  • 25g grated mild cheddar cheese (optional)
  • A knob of butter (for the mash)
  • Salt and pepper (to taste, optional)
METHOD

  1. Preheat the oven to 180°C fan / 200°C conventional.
  2. Cook the sausages under the grill or in a pan until golden and cooked through. Allow to cool slightly, then slice into small chunks or leave whole if you prefer.
  3. Meanwhile, gently soften the chopped onion in a pan with a little oil or butter. Add the baked beans, ketchup or BBQ sauce, paprika, and sausage slices. Stir and simmer for 5–10 minutes.
  4. Spoon the sausage and bean mix into a small ovenproof dish.
  5. Top with the mashed potato, fluffing it with a fork to create ridges. Sprinkle with grated cheese if using.
  6. Bake for 20–25 minutes until golden and bubbling.

Multi-Cooker Option

  • Step 1–3: As above.
  • Step 4: Transfer bean and sausage mix to the multi-cooker bowl.
  • Step 5: Spoon over mash and close the crisping lid.
  • Cook: Use the Bake/Roast function at 180°C for 10–15 minutes until golden on top.
  • Note: Cheese topping can go on in the last 5 minutes.
