Wonderful joint of pork – gave it a blast @ 220 for 20 mins then cooked for 35 mins/lb at 170 then a long rest – super crackling (I did have to score the skin but a decent serrated edge bread knife makes light work of that!). Served 6 hungry people with enough leftovers for a stir fry the next day.
