INGREDIENTS
  • 1 kg diced lamb
  • 2 tbsp olive oil
  • 2 large onions, finely chopped
  • 4 cloves of garlic, minced
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp cinnamon powder
  • 1/2 tsp cayenne pepper (adjust according to taste)
  • 1 tsp smoked paprika
  • 1 tsp turmeric powder
  • 400g chopped tomatoes
  • 500 ml beef or lamb stock
  • 1 tbsp tomato paste
  • 1 tsp honey
  • Salt and pepper, to taste
  • Fresh coriander, chopped for garnish
  • Juice of 1 lemon
METHOD

  1. Brown the Lamb: In a large pot, heat the olive oil over medium-high heat. Add the diced lamb in batches and brown all sides. Remove the lamb and set aside.
  2. Sauté Aromatics: In the same pot, add a bit more oil if needed and sauté the onions until they're soft and golden. Add the garlic and cook for another minute.
  3. Add Spices: Stir in the cumin, coriander, cinnamon, cayenne pepper, smoked paprika, and turmeric. Cook for a minute until the spices are fragrant.
  4. Combine Ingredients: Return the lamb to the pot. Add the chopped tomatoes, stock, tomato paste, and honey. Stir well to combine.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the lamb is tender.
  6. Finish: Adjust the seasoning with salt and pepper. Add the lemon juice and garnish with fresh coriander.
  7. Serve: Serve hot with your choice of side.

Sides and Matches for Spicy Lamb Stew:

  1. Couscous:
    • Couscous is a staple in Middle Eastern cuisine and works wonderfully with lamb stews. Its light and fluffy texture makes it an ideal base to soak up the stew’s juices.
  2. Basmati Rice:
    • Aromatic basmati rice is another excellent choice, offering a fragrant and slightly nutty complement to the spices in the stew.
  3. Flatbreads:
    • Freshly baked flatbreads like naan, pita, or roti can be used to scoop up the stew, adding a comforting, hearty element to the meal.
  4. Roasted Vegetables:
    • Try roasting vegetables such as carrots, parsnips, or sweet potatoes. Their natural sweetness contrasts nicely with the spiciness of the stew.
  5. Garlic Mashed Potatoes:
    • Creamy garlic mashed potatoes provide a rich and comforting side that pairs beautifully with the bold flavours of the stew.
  6. Green Beans Almondine:
    • For a lighter side, green beans tossed with butter and toasted almonds offer a crunchy, nutty contrast to the tender, spiced meat.
  7. Cucumber Yogurt Salad:
    • A cooling cucumber and yogurt salad seasoned with mint or dill can help balance the heat and spice of the lamb stew.

Preparation Time: Approximately 20-30 minutes. This includes chopping onions, mincing garlic, and measuring out spices.
Cooking Time: About 1.5 to 2 hours. This time is mostly for simmering the stew to ensure the lamb is tender and the flavours meld beautifully.

Hot Tips

  • Browning the lamb in batches prevents it from steaming and ensures a nice sear.
  • If the stew is too thick, add a bit more stock or water. If too thin, simmer uncovered to reduce.

Pairings

  1. Red Wine:
    • Syrah/Shiraz: This wine is known for its bold, peppery profile, which can stand up to the spices in the stew.
    • Grenache: Offers a fruity balance with a hint of spice that complements lamb particularly well.
    • Zinfandel: The robust nature and ripe fruitiness of a Zinfandel can enhance the richness of the lamb.
  2. Beer:
    • Pale Ale: The hoppy character of a pale ale can refresh the palate between bites of a spicy and rich stew.
    • Amber Ale: Its malt-forward flavour provides a sweet balance to the heat and spices in the stew.

Non-Alcoholic Options:

  1. Sparkling Water:
    • A glass of sparkling water with a slice of lemon can cleanse the palate and refresh your taste buds without competing with the flavours of the stew.
  2. Mint Tea:
    • Mint has a cooling effect, which makes it a great choice to soothe the palate when eating spicy foods.
  3. Ginger Beer:
    • Non-alcoholic ginger beer offers a spicy kick that can match the intensity of the stew while adding a refreshing zing.
  4. Pomegranate Juice:
    • The tart and sweet profile of pomegranate juice works well with Middle Eastern dishes and can stand up to the bold flavours of a spicy lamb stew.
