Mediterranean Chicken with Peppers and Tomatoes

INGREDIENTS

Ingredients:

  • 4 boneless chicken thighs
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 2 medium tomatoes, diced
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Olive oil
  • Fresh parsley, chopped (for garnish)
  • Juice of half a lemon
  • Optional: Crumbled feta cheese for serving
METHOD

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, oregano, and basil. In a pan over medium heat, briefly sear the chicken in olive oil until golden on both sides. They don't need to be cooked through at this point.
  3. Prepare the Vegetables: In the same pan, add a bit more olive oil. Sauté the onions and garlic until translucent. Add the bell peppers and cook for a few minutes until slightly softened. Finally, add the diced tomatoes and cook until they start to break down. Season with salt and pepper.
  4. Assemble the Casserole: In a baking dish, spread the vegetable mixture as the base. Place the seared chicken thighs on top of the vegetables. If you're using chicken stock or white wine, pour it over the chicken.
  5. Bake: Cover the dish with foil and bake in the preheated oven for about 25-30 minutes. Then, remove the foil and bake for an additional 10 minutes to brown the top slightly.
  6. Finish and Serve: Squeeze lemon juice over the bake and sprinkle with fresh parsley. Optionally, top with crumbled feta cheese.
  7. Serving Suggestions: This casserole pairs beautifully with a side of rice, pasta, or crusty bread.

Here are some suggestions that complement the flavours of the dish:

  1. Grains:
    • Couscous: Fluffy couscous is light and pairs well with the rich flavours of the bake.
    • Quinoa: A healthy, protein-rich option that absorbs the flavours of the dish.
    • Rice: Basmati or a fragrant jasmine rice would be excellent for soaking up the delicious juices.
  2. Bread:
    • Crusty Bread: A fresh baguette or artisanal bread is perfect for dipping into the sauce.
    • Pita Bread: Warm pita bread can be used for scooping up the chicken and vegetables.
  3. Pasta:
    • Orzo: This rice-shaped pasta is a great side for Mediterranean dishes.
    • Spaghetti or Linguine: Lightly tossed in olive oil and garlic, they make a simple yet delicious pairing.
  4. Vegetables:
    • Roasted Vegetables: Roasted Mediterranean vegetables like zucchini, eggplant, and red onions would be a colourful and healthy addition.
    • Green Salad: A crisp green salad with a lemony vinaigrette can add a refreshing contrast to the richness of the bake.
    • Steamed Asparagus or Green Beans: These lightly seasoned vegetables bring a pleasant crunch and freshness.
  5. Potatoes:
    • Roasted Potatoes: Seasoned with herbs to match the Mediterranean theme.
    • Garlic Mashed Potatoes: For a more indulgent side, creamy garlic mashed potatoes pair wonderfully.
  6. Legumes:
    • Lentils: A side of cooked lentils, especially brown or green, would complement the protein-rich chicken.
  7. For a Lighter Touch:
    • Greek Yogurt or Tzatziki: Serve on the side for a creamy, cooling contrast to the spiced, warm bake.

Alcoholic Options

  1. White Wine:
    • Sauvignon Blanc: Crisp and refreshing, it pairs well with the herbs and spices in the dish.
    • Chardonnay: Choose a lightly oaked or unoaked variety for a smooth complement.
    • Pinot Grigio: Its light and crisp nature makes it a great match for chicken dishes.
  2. Red Wine:
    • Pinot Noir: A lighter red wine that won’t overpower the flavors of the chicken.
    • Grenache: Its fruity and spicy notes can pair nicely with the Mediterranean herbs.
  3. Rosé Wine:
    • A dry rosé can offer a balance of fruitiness and acidity that pairs well with both the chicken and the vegetables.
  4. Beer:
    • Pale Ale or Lager: These beers are light enough not to overshadow the dish's flavours.
    • Wheat Beer: Its citrus notes can complement the Mediterranean seasonings.

Non-Alcoholic Options

  1. Sparkling Water:
    • With a squeeze of lemon or lime, it’s refreshing and can cleanse the palate.
  2. Iced Tea:
    • Herbal or citrus-infused iced teas can be a delightful pairing.
  3. Lemonade:
    • Homemade lemonade, not too sweet, can complement the dish's richness.
  4. Fruit-Infused Water:
    • Water infused with cucumber, lemon, or mint can be light and refreshing.

For a Mediterranean Touch

  1. Greek Frappé:
    • A frothy iced coffee, if you enjoy a caffeine kick with your meal.
  2. Sangria (can be made non-alcoholic):
    • A fruity sangria, with or without alcohol, can mirror the dish's Mediterranean essence.

When pairing drinks, consider the balance of flavours. Light and refreshing drinks usually pair well with the herbs and spices typical in Mediterranean cuisine.
