Lamb koftas are a delicious and aromatic dish, popular in Middle Eastern and Mediterranean cuisine. INGREDIENTS
  • 500g lamb mince
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp chilli flakes (optional)
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
METHOD

  • In a large bowl, mix the lamb mince with the grated onion, garlic, spices, herbs, olive oil, salt, and pepper. Use your hands to combine everything well, ensuring the mixture is evenly distributed.
  • Divide the mixture into 8 equal portions and shape each one into a sausage-like shape around a skewer. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  • Place the koftas on a plate, cover, and chill in the fridge for at least 30 minutes. This helps them firm up and hold their shape while cooking.
  • Preheat a grill, griddle pan, or barbecue to medium-high heat. Cook the koftas for about 8-10 minutes, turning occasionally, until they are browned and cooked through.
  • Let them rest for a couple of minutes before serving.
