Horiatiki (Greek Village Salad)

Horiatiki is a classic Greek salad that epitomises the simplicity and freshness of Mediterranean cooking. With ripe tomatoes, crisp cucumber, briny olives, creamy feta, and a bright olive oil dressing, it’s the perfect accompaniment to grilled meats or a light meal in itself.

INGREDIENTS
  • 4 large ripe tomatoes, cut into wedges
  • 1 cucumber, peeled in stripes and thickly sliced
  • 1 small red onion, thinly sliced
  • 1 green pepper (capsicum), deseeded and thinly sliced
  • 150g Kalamata olives
  • 200g Greek feta cheese, cut into thick slices or a block
  • 3–4 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar (optional)
  • 1 tsp dried oregano
  • Sea salt and freshly ground black pepper

METHOD

  1. In a large shallow dish or platter, arrange the tomato wedges, cucumber slices, red onion, and green pepper.
  2. Scatter over the Kalamata olives.
  3. Place the block of feta cheese on top, or break into large rustic chunks.
  4. Drizzle generously with the extra virgin olive oil, and add the vinegar if using.
  5. Sprinkle with dried oregano and season lightly with sea salt and black pepper.
  6. Serve immediately, letting everyone help themselves.
