Chicken Kyiv

Chicken Kyiv is a true classic — juicy chicken breast stuffed with garlicky herb butter, coated in golden breadcrumbs, and fried until crisp before being finished in the oven. It’s indulgent, comforting, and perfect for a special dinner. Our version balances a crunchy coating with a flood of buttery garlic inside.

INGREDIENTS
  • 4 chicken breasts, skinless and boneless
  • 100g unsalted butter, softened
  • 3 garlic cloves, finely minced
  • Small bunch fresh parsley, finely chopped
  • 1 tsp fresh dill (optional)
  • 1 tsp lemon juice
  • 1 pinch of sea salt
  • Freshly ground black pepper
  • 100g plain flour, seasoned
  • 2 large eggs, beaten
  • 150g fresh breadcrumbs (panko works well)
  • Vegetable oil for frying
METHOD

  • Make the butter: In a bowl, mash together the softened butter, garlic, parsley, dill (if using), lemon juice, salt, and pepper. Shape into a log, wrap in parchment, and chill until firm.
  • Prepare the chicken: Use a sharp knife to cut a deep pocket into each chicken breast. Slice carefully so you don’t cut through.
  • Stuff: Cut slices of the chilled butter and push into the pocket. Press gently to close the chicken around it.
  • Coat: Dredge each breast in seasoned flour, dip into beaten egg, and coat with breadcrumbs. For a thicker crust, repeat the egg and breadcrumb stage. Chill for 30 minutes.
  • Cook: Heat oven to 180°C. Shallow fry each chicken breast in hot oil until golden all over (about 3–4 minutes per side), then transfer to a baking tray. Finish in the oven for 20 minutes until cooked through and piping hot.
  • Serve: Allow to rest briefly, then cut into the chicken and let the garlic butter flow out.
