INGREDIENTS
  • Chicken breast: 500 g, thinly sliced
  • Egg noodles: 200 g, cooked according to package instructions
  • Vegetable oil: 2 tbsp
  • Garlic: 2 cloves, minced
  • Ginger: 1 tbsp, freshly grated
  • Spring onions: 3, chopped, separate the whites and greens
  • Bell pepper: 1, julienned
  • Carrot: 1 medium, julienned
  • Soy sauce: 3 tbsp
  • Oyster sauce: 1 tbsp
  • Sesame oil: 1 tsp
  • White pepper: 1 tsp
METHOD

  1. Prepare the Chicken: In a bowl, combine the chicken slices with 1 tablespoon of soy sauce and white pepper. Let it marinate for about 10 minutes.
  2. Cook Noodles: Cook the noodles according to the package instructions until just tender, then rinse under cold water and drain. Set aside.
  3. Cook the Chicken: Heat a tablespoon of vegetable oil in a wok or large frying pan over high heat. Stir-fry the chicken for about 3-4 minutes, or until it is cooked through. Set aside.
  4. Stir-Fry Vegetables: Heat the remaining oil in the wok. Add the garlic, ginger, and the white parts of the spring onions. Stir-fry for about 30 seconds until fragrant. Add the bell pepper and carrot and continue to stir-fry for another 2 minutes until just softened.
  5. Combine and Season: Add the cooked noodles and chicken to the wok with the vegetables. Pour in the remaining soy sauce, oyster sauce, and toss everything together. Stir-fry for another minute, allowing the noodles to soak up the flavours.
  6. Finish with Sesame Oil: Drizzle with sesame oil and sprinkle the green parts of the spring onions over the top. Toss everything well to combine.
  7. Serve: Serve your chicken chow mein hot, garnished with additional spring onion greens if desired.
