INGREDIENTS
  • Chicken breast: 500 g, thinly sliced
  • Egg noodles: 200 g, cooked according to package instructions
  • Vegetable oil: 2 tbsp
  • Garlic: 2 cloves, minced
  • Ginger: 1 tbsp, freshly grated
  • Spring onions: 3, chopped, separate the whites and greens
  • Bell pepper: 1, julienned
  • Carrot: 1 medium, julienned
  • Soy sauce: 3 tbsp
  • Oyster sauce: 1 tbsp
  • Sesame oil: 1 tsp
  • White pepper: 1 tsp
METHOD

  1. Prepare the Chicken: In a bowl, combine the chicken slices with 1 tablespoon of soy sauce and white pepper. Let it marinate for about 10 minutes.
  2. Cook Noodles: Cook the noodles according to the package instructions until just tender, then rinse under cold water and drain. Set aside.
  3. Cook the Chicken: Heat a tablespoon of vegetable oil in a wok or large frying pan over high heat. Stir-fry the chicken for about 3-4 minutes, or until it is cooked through. Set aside.
  4. Stir-Fry Vegetables: Heat the remaining oil in the wok. Add the garlic, ginger, and the white parts of the spring onions. Stir-fry for about 30 seconds until fragrant. Add the bell pepper and carrot and continue to stir-fry for another 2 minutes until just softened.
  5. Combine and Season: Add the cooked noodles and chicken to the wok with the vegetables. Pour in the remaining soy sauce, oyster sauce, and toss everything together. Stir-fry for another minute, allowing the noodles to soak up the flavours.
  6. Finish with Sesame Oil: Drizzle with sesame oil and sprinkle the green parts of the spring onions over the top. Toss everything well to combine.
  7. Serve: Serve your chicken chow mein hot, garnished with additional spring onion greens if desired.

Hot Tips

  • Ensuring Flavour: Make sure your wok is very hot before adding your ingredients to get a good sear on the chicken and a smoky flavour to the dish.
  • Variations: Feel free to add other vegetables like broccoli, sugar snap peas, or baby corn for more texture and flavour.

Pairings

Alcoholic Drinks

  1. Beer:
    • A crisp, light beer like a lager or pilsner works wonderfully with chow mein. The beer's clean finish can cleanse the palate between bites, making it an excellent choice for oily or spicy versions of the dish.
  2. White Wine:
    • Riesling, with its balance of sweetness and acidity, complements the savoury flavours of soy and oyster sauce in chow mein. Its fruity undertones can enhance the overall meal experience.
    • Pinot Gris or a light Chardonnay can also pair well, offering a refreshing counterpoint to the hearty flavours of the noodles and chicken.
  3. Sake:
    • Sake, especially when served chilled, pairs beautifully with chow mein. Its subtle sweetness and umami can elevate the dish's flavours.

Non-Alcoholic Drinks

  1. Green Tea:
    • Green tea, with its slight bitterness, is a traditional choice that helps cut through the grease and cleanse the palate, making it perfect for oily dishes.
  2. Sparkling Water:
    • A glass of sparkling water with a squeeze of lemon can be refreshing and help balance the richness of the chow mein.
  3. Ginger Tea:
    • Ginger tea offers a warm, spicy kick that complements the ginger used in the dish, and it's great for aiding digestion.
