Tools You'll Need:

  • A sharp chef’s knife or boning knife
  • A cutting board
  • Kitchen shears (optional, but useful for cutting through joints)

Step-by-Step Guide:

  • Remove the Legs:
    • Place the chicken breast-side up on the cutting board.
    • Pull a leg away from the body and slice through the skin between the breast and leg.
    • Bend the leg back until the thigh bone pops out of its socket. Cut through the joint to fully detach the leg.
    • Repeat with the other leg.
  • Separate the Drumsticks and Thighs:
    • Locate the line of fat defining the drumstick from the thigh.
    • Cut through this line to separate each leg into a drumstick and thigh.
  • Remove the Wings:
    • Stretch the wing away from the body and cut through the joint where it attaches to the breast.
    • If desired, leave the wing tips on for roasting or remove them at the first joint for stock.
  • Remove the Breast:
    • Place the chicken breast-side up again. Locate the breastbone in the center.
    • Using your knife, make a cut along one side of the breastbone, then angle the knife to slice the meat away from the rib cage, working your way down until the breast is fully removed.
    • Repeat on the other side to remove the second breast.
  • Optional – Debone the Thighs:
    • Make a cut along the bone, then use your knife to scrape the meat away from the bone, working carefully until you can remove the bone entirely.
