Marry Me Chicken

This dish has become famous for good reason – a rich, creamy chicken recipe with garlic, Parmesan, and sun-dried tomatoes that’s said to be so good, it could inspire a marriage proposal. Whether or not that’s true, it’s a perfect comfort dish that feels luxurious yet is easy to prepare.

INGREDIENTS
  • 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp chilli flakes (optional)
  • 1 cup (240 ml) chicken stock
  • 1 cup (240 ml) double cream
  • ½ cup (50 g) grated Parmesan cheese
  • ½ cup (80 g) sun-dried tomatoes, drained and sliced
  • Fresh basil, chopped (for garnish)
  • Salt and freshly ground black pepper

METHOD

  1. Prepare the Chicken
    Pat the chicken dry and season generously with salt and pepper.
  2. Sear the Chicken
    Heat olive oil and butter in a large skillet over medium-high heat.
    Add chicken and cook for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Make the Sauce Base
    In the same skillet, add garlic and cook for 30 seconds until fragrant.
    Stir in oregano, thyme, and chilli flakes.
  4. Build the Sauce
    Pour in chicken stock, scraping up any browned bits from the pan.
    Add double cream, Parmesan, and sun-dried tomatoes. Stir until smooth and slightly thickened.
  5. Finish Cooking
    Return chicken to the skillet, spoon sauce over, and simmer on low for 10 minutes until chicken is fully cooked through (internal temp: 74°C/165°F).
  6. Serve
    Garnish with fresh basil and extra Parmesan.
