Grid Iron Meat: North Yorkshire Saddleback Back Bacon

At Grid Iron Meat, we take pride in our traditional approach to producing premium quality meat. Our North Yorkshire Saddleback back bacon exemplifies this commitment, offering a taste of the past with every slice. This bacon is made from Saddleback pork, a native breed renowned for its rich flavour and generous marbling.

The Saddleback Breed

Saddleback pigs are a traditional British breed, identifiable by their distinctive black coat with a white “saddle” band around their shoulders. These pigs are prized for their robustness and the high quality of their meat. Raised on North Yorkshire farms, our Saddlebacks benefit from a free-range lifestyle, ensuring they grow naturally and healthily, which directly translates into the superior quality of the meat.

Curing Process

Our back bacon is cured using the same meticulous method as our Old Fashioned Bacon. We use only the finest sea salt to cure the pork, allowing it to draw out moisture and develop its characteristic depth of flavour. This traditional curing process enhances the natural taste of the meat while preserving its succulent texture.

Characteristics of Our Back Bacon

  • Rich and Savoury: The sea salt cure brings out the pork’s natural richness, offering a savoury taste that is both robust and satisfying.
  • Perfect Fat Balance: The Saddleback breed’s inherent marbling ensures that our back bacon has the perfect balance of lean meat and fat, which melts during cooking, adding juiciness and enhancing the overall flavour.
  • Thick Cut: Our back bacon is thickly sliced, making it ideal for a hearty breakfast or a luxurious sandwich. The thickness ensures it retains its moisture and texture during cooking.

Cooking Tips

  • Pan-Frying: Heat a non-stick pan over medium heat. Lay the bacon slices in the pan, turning occasionally, until crispy and golden. The rendered fat can be used to fry eggs or toast bread, infusing them with a delicious bacon flavour.
  • Grilling: Place the bacon under a preheated grill. Cook on each side until it reaches the desired crispiness. This method is excellent for producing a slightly charred, smoky taste.
  • Oven-Baking: For a less hands-on approach, bake the bacon in a preheated oven at 200°C (180°C fan). Lay the slices on a baking tray lined with parchment paper and cook for about 15-20 minutes, turning halfway through.
