INGREDIENTS

  • 4 boneless chicken thighs
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 2 medium tomatoes, diced
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped

METHOD

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, oregano, and basil. In a pan over medium heat, briefly sear the chicken in olive oil until golden on both sides. They don't need to be cooked through at this point.

  4. Assemble the Casserole: In a baking dish, spread the vegetable mixture as the base. Place the seared chicken thighs on top of the vegetables. If you're using chicken stock or white wine, pour it over the chicken.
  5. Bake: Cover the dish with foil and bake in the preheated oven for about 25-30 minutes. Then, remove the foil and bake for an additional 10 minutes to brown the top slightly.
  6. Finish and Serve: Squeeze lemon juice over the bake and sprinkle with fresh parsley. Optionally, top with crumbled feta cheese.
