Our Wagyu Rib Roast is a bone-in cut, expertly trimmed to ensure maximum flavour and tenderness. This cut is also known as a “standing rib roast” due to its impressive presentation on the table.
Wagyu beef is renowned for its marbling, which gives the meat a buttery texture and rich, beefy flavour. The fat in Wagyu beef is also high in unsaturated fats, which are considered to be “good fats” that can help improve cholesterol levels and reduce the risk of heart disease.
To prepare our Wagyu Rib Roast preheat your oven to 230°C, then season the roast generously with salt and pepper. Place it on a rack in a roasting pan and cook for 15 minutes to sear the outside. Reduce the heat to 170°C and continue to cook for approximately 2.5 to 3 hours, or until the internal temperature reaches 55°F for medium-rare doneness.

Oven Roasting: Preheat your oven to 230°C, then sear the roast for 15 minutes to develop a crust. Reduce the oven temperature to 170°C and continue cooking for 2.5 to 3 hours, or until the internal temperature reaches 54°C for medium-rare doneness. Rest the roast for 15 minutes before carving.
Grilling: Preheat your grill to high heat, then sear the roast on all sides to develop a crust. Reduce the heat to medium and continue cooking for 2 to 2.5 hours, or until the internal temperature reaches 54°C for medium-rare doneness. Rest the roast for 15 minutes before carving.
Smoking: Preheat your smoker to 107°C, then smoke the roast for 4 to 5 hours, or until the internal temperature reaches 54°C for medium-rare doneness. Rest the roast for 15 minutes before carving.
Sous Vide: Preheat a water bath to 54°C, then vacuum-seal the roast and cook it in the water bath for 8 to 12 hours, depending on the thickness of the roast. Remove the roast from the bag and sear it in a hot pan or on a grill to develop a crust before serving.
