This lightly cured delicacy pays homage to the untamed beauty of Yorkshire, crafted from lamb that has roamed freely across the heaths, grazing on heather, bilberries, and wild herbs. Our sister company, Yorkshire Dales Charcuterie use the unique flora of the moors to infuse the lamb with subtle, yet distinct flavours, creating a product that is not only delicious but deeply connected to its land of origin.
Our bresaola is a celebration of local sourcing and artisanal tradition. It begins with select cuts of lamb, which are then cured with a blend of local botanicals including dried rowan berries, heather flowers, and bilberry leaves, each adding layers of complexity and a sense of place to the meat.
The infusion of these ingredients creates a flavour profile that is unmatched – the tangy sharpness of rowan berries, the subtle sweetness of heather flowers, and the earthy undertones of bilberry leaves all come together to enhance the natural, rich taste of the lamb.
