Cut from the heart of the sirloin and aged to perfection, our thick cut sirloin steak celebrates everything that makes native breed beef so exceptional. Each steak is hand-cut to around 450g, with a generous layer of creamy fat that renders beautifully during cooking, creating a deep, savoury flavour and juicy texture.
Sourcing
Our sirloin steaks come from native breed cattle reared on pasture in North Yorkshire. The beef is traditionally dry-aged to enhance tenderness and concentrate flavour before being expertly butchered and prepared by hand.
About the Cut
The sirloin sits between the fillet and the rump — a perfect balance of tenderness and flavour. This thick 450g cut gives a restaurant-style experience that’s ideal for sharing or slicing to serve two.
Cooking Method
Best cooked in a hot cast-iron pan or on a grill. Sear well on both sides to create a caramelised crust, then finish in the oven or move to a cooler part of the grill until your preferred doneness is reached. Rest for at least five minutes before serving to retain juiciness.
