This product stands as a testament to the traditional craft of meat preservation, direct from North Yorkshire.
Our lardons come from premium heritage breed pork, carefully chosen from local farms to ensure supreme quality and taste. These indigenous breeds are celebrated for their superior meat, laying the groundwork for the exceptional flavour of our pancetta.
The preparation starts with meticulous curing, using a blend of aromatic herbs and spices to infuse the pork with a complex and rich taste. This crucial step fosters the development of the unique flavour profile of our pancetta.
Following the curing, the meat is gently smoked over oak wood, adding a delicate yet impactful smoky note that enhances the meat’s natural taste. This oak-smoked technique is central to achieving the sophisticated flavour harmony that defines our pancetta.
The process concludes with an air-drying period of one week, allowing the flavours to intensify and the texture to reach its prime. This drying method guarantees a pancetta that’s not just flavour-rich but also has the perfect texture, ideal for a range of culinary uses.
At Yorkshire Dales Charcuterie, we’re dedicated to upholding the charcuterie tradition, combining timeless methods with the best local ingredients. Our Smoked Pancetta Lardons embody this dedication.
Our Smoked Pancetta Lardons, with their deep taste and adaptable texture, can be the highlight of many recipes, transforming simple meals into gourmet delights. Here are some suggestions:
Pasta Creations: Sauté the lardons until crispy to serve as a foundation for pasta dishes like carbonara or amatriciana, adding a rich flavour and enjoyable texture contrast.
Brunch Favourites: Mix the pancetta into omelettes, frittatas, or quiches for brunch. Its smoky taste complements eggs and cheese, adding a refined touch to breakfast classics.
Savoury Pastries: Incorporate the lardons into fillings for savoury pies or pastries, pairing with cheese, vegetables, or herbs for a snack or light dish.
Soup and Stew Enhancements: Begin your soups or stews by cooking down the pancetta, which lends a deep, smoky essence to the foundation, enriching the overall flavour.
Salad Toppings: Add a crunchy element to salads with crispy pancetta, offering a flavourful contrast to both light and robust salad components.
Side Dish Upgrades: Boost the taste of sides like mashed potatoes, risotto, or mac and cheese by incorporating pancetta, adding a layer of smoky depth.
Pizza Toppings: Elevate your pizza with pancetta, alone or with toppings like onions and various cheeses, enhancing the flavours of the cheese and crust.
Incorporating our Smoked Pancetta Lardons into your recipes not only introduces a rich flavour but also adds an artistic flair to your culinary creations.
