Collar Bacon – 500g

Dry cured shoulder bacon.

Collar bacon is from the central muscle of the shoulder and is the same cut as a pork ribeye steak. There is a natural seem of fat running through the bacon that adds flavour and moisture during cooking.

We dry cure our collar bacon then wash it under ice cold water before finally air drying.

Description

Our collar bacon is from the shoulder of North Yorkshire farmed, rare breed pork. We select the pork for its higher fat content, as we believe that this leads to a much tastier product.The slow growing breeds that we use for our bacon put on weight and add flavour slowly in a natural way.

We take the central muscle from the pork shoulder. The same muscle that butchers use for pork ribeye steaks. This is then dry cured slowly before being rinsed in iced water and hung to air dry to develop a fantastic texture and concentrate the flavour.

Collar bacon is just right for making a bacon sandwich with a perfect balance of tender meat and melting fat for extra flavour.

If you want to make your own collar bacon at home, you can buy a whole pork collar and cure it yourself. Let us know if you need some help or a sachet of cure mix.

    First order just arrived in time for breakfast. I cannot remember tasting a nicer bacon. Thick cut and nice marbling, lovely colour and when cooked moist, tender and full of flavour. Grilled and served on thinly sliced buttered bread for a perfect bacon “butty”.

    I thought the bacon and meat I bought which was quite a lot was extremely nice… but all the bacon and a couple of the meats went out of date in 2 days…due to this I would be very hesitant to order anymore produce…
    Had this been one pack it would have been bad enough… but I had no time to use the other packs of bacon and meat..
