Description
Our collar bacon is from the shoulder of North Yorkshire farmed, rare breed pork. We select the pork for its higher fat content, as we believe that this leads to a much tastier product.The slow growing breeds that we use for our bacon put on weight and add flavour slowly in a natural way.
We take the central muscle from the pork shoulder. The same muscle that butchers use for pork ribeye steaks. This is then dry cured slowly before being rinsed in iced water and hung to air dry to develop a fantastic texture and concentrate the flavour.
Collar bacon is just right for making a bacon sandwich with a perfect balance of tender meat and melting fat for extra flavour.
If you want to make your own collar bacon at home, you can buy a whole pork collar and cure it yourself. Let us know if you need some help or a sachet of cure mix.

Wow. Finally took the plung and ordered some of this bacon and never going back.
Put it on and came back 2 minutes later and my kitchen smelt like my nan cooking bacon 25 yrs ago…
As for the actually quality, it is very salty as others have said but it is very very good. Nice and thick, 2 slices more than enough for either a big sandwich or for ‘ham’ egg and chips. Honestly if you were using the cheap buns from a supermarket there is so little shrinkage that you could get away with one slice folded in a small bacon bap.
The quality is very very good. My reason for trying this bacon is that streaky isn’t for me and with back bacon i hate the fat being on the outside and therefore very hard to get crispy. In general i removed all fat from meats and hate it but this collar bacon with it being running throughout means that you can get a good sear on the fat and as it renders out it cooks the bacon.
Really is very good quality bacon.
