These breeds have been selected over generations for specific characteristics such as hardiness, disease resistance, and ability to thrive in their specific environment.

As a result, the meat of native breeds tends to be fatter, resulting in more depth of flavour, and more nutritious than that of commercial breeds.

Because native breeds are raised on natural grazing, they tend to be free of artificial hormones and antibiotics, which are often used in industrial farming.

    "I had friends round for the evening and served up two cote de boeufs with chips and salad. Everyone was so impressed by the presentation, taste and the amount of succulent meat on each bone. Just delicious. Each cote de boeuf was sealed on a high heat for 4mins on each side. Then placed on the lowest setting in the oven for 1.5 hours, until the meat thermometer reached 60c. It was covered in tinfoil for 10mins before slicing and I have never been so impressed. I was absolutely delighted. I would definitely recommend it."
