Trout have been farmed on the Kilnsey Estate for hundreds of years, originally by monks from the local abbey. The natural spring water creates the perfect conditions for the trout.
Jake Buchan of The Holy Smokery smokes these beautiful trout fillets over oak with sea salt to enhance the subtle flavour.
