This cut is ideal for making pulled pork. The bone is left in to help with cooking and flavour. Should be cooked slowly in a moderate oven until the meat fall away from the bone.

Nicely butchered joint with a good cover of fat just like pork we use to have years ago, when roasted was good flavoured pork did enjoy the crackling, it was just as delicious cold the next day as it was cooked the day before.
