Roast Mutton Rack with Sausage Meat Stuffing

A roast mutton rack is a showstopper cut with deep, rich flavour that takes beautifully to a simple yet bold preparation. Here we pair it with a classic sausage meat stuffing, rolled and baked alongside the rack for added indulgence. The stuffing bakes into a crusty, savoury roll that slices perfectly at the table. This dish is hearty, rustic, and designed to make the most of quality mutton.

INGREDIENTS
  • 1 rack of mutton (around 1–1.5kg, French trimmed if preferred)
  • Olive oil – 2 tbsp
  • Salt flakes & freshly ground black pepper
  • Garlic – 4 cloves, smashed
  • Fresh rosemary – 3 sprigs
  • Fresh thyme – 2 sprigs

For the sausage meat stuffing

  • 500g sausage meat (pork or mutton sausage meat works well)
  • 1 onion – finely diced
  • 2 garlic cloves – minced
  • 100g fresh breadcrumbs
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 egg, beaten
  • Salt & pepper
METHOD

  • Prepare the stuffing
    • Sauté the onion and garlic in a little oil until softened.
    • Allow to cool, then mix with sausage meat, breadcrumbs, herbs, and beaten egg.
    • Season generously with salt and pepper.
    • Roll into a log shape and place on a lined tray, ready to bake alongside the mutton.
  • Prepare the mutton rack
    • Rub the rack with olive oil, garlic, rosemary, thyme, salt, and pepper.
    • Place on a roasting tray.
  • Roast
    • Preheat oven to 200°C (fan 180°C).
    • Roast the mutton for 25–30 minutes per 500g, depending on your preference (aim for medium, where the fat renders and the meat stays juicy).
    • Place the sausage roll in the oven at the same time — bake for 35–40 minutes, until golden and cooked through.
  • Rest and carve
    • Rest the mutton rack for at least 15 minutes before carving between the bones.
    • Slice the sausage stuffing into thick discs and serve alongside.
