Pepperoni Sausage Rolls

Creating a pepperoni sausage roll with sliced pepperoni and pork sausage meat wrapped in shortcrust pastry is a twist on the classic sausage roll. This recipe combines the spiciness of pepperoni with the savoury flavour of pork sausage, all encased in a buttery, flaky crust.

INGREDIENTS
  • 450g pork sausage meat
  • 100g pepperoni, roughly chopped
  • 2 sheets of ready-made shortcrust pastry
  • 1 egg, beaten (for egg wash)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1 teaspoon fennel seeds or Italian seasoning for added flavour
METHOD

1. Prepare the Filling:

  • In a medium pan, sauté the onion and garlic until they're soft and translucent. Allow them to cool slightly.
  • In a large bowl, mix the pork sausage meat with the sautéed onion and garlic, smoked paprika, and optional fennel seeds or Italian seasoning. Season with salt and pepper to taste.
  • Add the chopped pepperoni to the mixture and combine everything thoroughly.

2. Preheat the Oven:

  • Preheat your oven to 190°C.

3. Assemble the Sausage Rolls:

  • Roll out the shortcrust pastry on a lightly floured surface to about ¼ inch thickness. Cut each sheet into strips about 5 inches wide.
  • Divide the sausage and pepperoni mixture into equal portions and shape each into a log that runs the length of each pastry strip.
  • Place a log of the meat mixture along the centre of each pastry strip.
  • Brush one edge of the pastry with the beaten egg, then fold the pastry over the filling to enclose it, pressing down to seal.
  • Cut the long rolls into desired sizes, typically about 2 inches long, and make small slits on the top of each roll for steam to escape.

4. Apply Egg Wash and Bake:

  • Place the sausage rolls on a baking sheet lined with parchment paper, ensuring there's space between each roll.
  • Brush the top of each sausage roll with the beaten egg to give a golden colour when baked.
  • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the meat is cooked through.

5. Serving:

  • Allow the sausage rolls to cool slightly on a wire rack before serving. They can be enjoyed warm or at room temperature.

These pepperoni and pork sausage meat rolls, wrapped in crisp shortcrust pastry, make for a perfect snack, appetiser, or addition to a picnic or party spread. The fusion of pepperoni and sausage offers a tasty twist on the traditional sausage roll, sure to be a hit with both kids and adults.

Hot Tips

  • Seasoning: Ensure your sausage meat is well-seasoned. Taste the mixture before wrapping it in pastry by cooking a small amount in a pan and adjusting the seasoning as necessary.
  • Pastry Thickness: Roll out your shortcrust pastry to an even thickness, about 1/8 inch (3 mm), so it cooks uniformly. Too thick, and it might not cook through; too thin, and it might break or not provide enough structure.
  • Keep Ingredients Cold: The pastry should be kept cold until it's ready to use, as this helps to keep it flaky and prevents the fat from melting before it goes into the oven. Similarly, chilling the assembled rolls before baking can help maintain their shape and improve the texture of the pastry.
  • Seal Properly: Ensure the edges of your pastry are sealed well to prevent the filling from leaking out during baking. Lightly brush one edge with water or beaten egg to help seal it.

Pairings

Alcoholic Beverages

  1. Beer:
    • Lagers and pilsners offer a crisp and refreshing counterpoint to the savoury sausage rolls.
    • Pale ales or amber ales provide a balance of malt and hops that can complement the meaty and spicy flavours of the pepperoni.
  2. Red Wine:
    • A medium-bodied red wine like Merlot or Chianti can complement the richness of the sausage meat without overpowering the flavours.
    • Zinfandel or Shiraz can stand up to the spiciness of the pepperoni with their robust and fruity profiles.
  3. Cider:
    • Dry apple cider offers a sweet and tangy contrast to the savoury rolls, while pear cider provides a slightly sweeter pairing option.

Non-Alcoholic Beverages

  1. Sparkling Water:
    • A refreshing choice that can cleanse the palate between bites, especially if infused with lemon or lime.
  2. Iced Tea:
    • Unsweetened or lightly sweetened iced tea can provide a refreshing and slightly astringent counterbalance to the rich sausage rolls.
  3. Lemonade:
    • The acidity and sweetness of lemonade can cut through the fattiness of the pastry and sausage, refreshing the palate.
  4. Ginger Ale:
    • Offers a sweet and spicy profile that can complement the savoury and spicy notes of the sausage rolls.
  5. Fruit Juices:
    • Apple or cranberry juice provides a sweet and tangy flavor that pairs well with the meaty and spicy characteristics of the dish.
