Kiev Surprise

This fun twist on the classic Chicken Kyiv swaps poultry for rich, flavourful beef or pork mince. Stuffed with garlic butter and coated in golden panko breadcrumbs, it delivers all the indulgence of the original with a surprise centre. Perfect for a weekend supper or a playful dinner party dish.

INGREDIENTS
  • 500g beef or pork mince
  • 100g butter (softened)
  • 2 cloves garlic (minced)
  • Small handful fresh parsley (chopped)
  • Salt and black pepper, to taste
  • 100g plain flour
  • 2 eggs (beaten)
  • 150g panko breadcrumbs
  • Oil, for frying
METHOD

  1. Prepare the garlic butter: In a bowl, mix softened butter with garlic, parsley, salt, and pepper. Shape into 4 small logs, wrap in cling film, and freeze until firm.
  2. Shape the Kiev Surprise: Divide the mince into 4 portions. Flatten each portion into a patty, place a frozen butter log in the centre, and carefully shape the mince around it to form a breast-like shape.
  3. Coat: Roll each Kiev Surprise first in flour, then dip in beaten egg, and coat with panko breadcrumbs.
  4. Cook: Heat oil in a frying pan to medium-high. Fry the Kievs for 3–4 minutes on each side until golden. Transfer to a preheated oven (180°C fan) for 15–18 minutes until cooked through.

Multi-Cooker Option

  • Air Fryer Method: Spray lightly with oil and cook at 180°C for 18–20 minutes, turning halfway for an even crust.
