    I used these tonight. I’d bought a pack on a whim and fancied them for dinner. All I did was season them, roast them on Gas 5 for an hour, then serve them with some Mint Sauce on top. Lovely.

    These are as close to the perfect mutton chops as you are likely to get. The flavour, the texture and the ease with which the meat comes from the bone make these exceptional. I pan fried them and finished them in the oven. As a major bonus, the potatoes I fried in the fat were truly delicious.
