This half shoulder from the knuckle end makes a lovely slow roast. Try cutting slots into the skin and inserting garlic and rosemary, then roast slowly with some good quality olive oil.

Slow cooked on a Kamado oven for about 5 hours, wrapping it in foil at 75 degrees C and adding some braising liquid before taking it to a final internal temp of 93 degrees C. Perfect pulled mutton!
Lip smackingly delicious. Will definitely be having again!
