Yorkshire Merguez Salami

A bold, North African-inspired salami made with British character. Our Yorkshire Merguez Salami blends native Yorkshire lamb and beef with warming spices and homemade harissa, then cold-smoked over Yorkshire oak and gently air-dried for several weeks.

Flavoured with smoked paprika, cumin, coriander, and fennel, this fully cured salami is ready to eat — offering all the punch of traditional merguez sausage in a refined, charcuterie-style format. The addition of our rich, house-made harissa paste — featuring chilli flakes, roasted red peppers, garlic, and Yorkshire rapeseed oil — gives each slice depth and complexity.

Tasting Notes:

  • Flavour: Rich lamb and beef with smoky warmth and gentle chilli heat.

  • Texture: Firm yet yielding, perfect for slicing thin.

  • Finish: Balanced spice with a lasting, aromatic complexity.

Ingredients: Lamb (40%), Beef (40%), Pork Fat (20%), Harissa Paste (Chillies, Garlic, Tomato, Vinegar, Oil, Salt), Sea Salt, Cure #2 (Sodium Nitrate & Nitrite), Dextrose, Sugar, Starter Culture, Smoked Paprika, Ground Cumin, Ground Coriander, Fennel Seeds, Garlic Powder, Black Pepper.

Allergens: None.

Storage: Store in a cool, dry place below 12°C. Once opened, keep refrigerated and consume within 14 days.

We prepare your order in our butchery on the day before delivery to ensure that everything reaches you in the best condition.

UK MAINLAND DELIVERIES

We deliver on a next day service throughout the UK mainland (please see below for restrictions). Your order is shipped in an insulated box.

Our delivery service allows you to pick a delivery date in advance when you reach the checkout. Our delivery days are Tuesday to Friday.

We use a courier service. They will notify you on the morning of delivery with an estimated time for delivery.

Delivery is free on orders over £50. (under £50 = £12.95) Sorry This is due to the cost involved in our chilled packaging and courier cost.
