Roast whole for a classic family dinner or poach gently before using the cooked meat in other dishes. Cooking times depend on the size of the bird and method. Check that the thickest part is thoroughly cooked using a food thermometer; a recognised benchmark is 75°C for 30 seconds, or an equivalent safe time-and-temperature combination.
