    Took a while to leave this review as I’ve taken my time curing and ageing guanciale. The meat was good and it’s made excellent cured meat.

    Perfect cut of pork for making “guanciale”. Most pork jowls available from local butchers are cut from small pigs, which are unsuitable for curing. These jowls from Grid Iron come in the right size, fat/meat structure and they also come fresh and ready to be processed. I will defo buy again.
