Our St Louis style pork ribs are a cut above the rest, quite literally. These ribs are exceptionally meaty, offering a generous portion of succulent pork that’s almost like having a whole pork belly, but without the skin.   • Oven Roasting: Season the ribs, cover with foil, and roast at 160°C for 2.5-3 hours. For a crispy finish, remove the foil and roast at 220°C for an additional 10-15 minutes.

    Yet again, a wonderful, huge slab of high quality meat, which makes for some comically large ribs. Smoke them slowly until they’re verging on being fall-apart tender – it’s hard to find words because it makes the kind of meal where everyone is silent. Really fantastic.

    Top quality pork. Not pumped with water. Would love to know what breed? Beautiful fat that renders down. Each rack will fill a whole oven shelf on its own, and a whole fridge shelf and most BBQ grills. These racks are best cut into individual ribs to be grilled/smoked, then wrapped in foil and slow cooked.. Each rib is a portion each person, melt in the mouth yummy. My second purchase from these lovely people. Monthly emails, no hassle.

    Family of four and was worried about portion size. Need not because we had over half left over. Great cut of meat but needs a good trim if you plan on getting a nice bark from smoking this for 9 odd hours.

    Well packaged and delivered on time.
    I bought three of these for a 7.5 hour smoke, and they were excellent.
    Good quality meat, and many happy guests.
    I did find hard to remove (but successfully did) the membrane on the back of the ribs.
    I also brine in a 3% salt solution overnight.
    I wouldn’t look anywhere else now for ribs.
