Cooking Tips:

- Oven Roasting: Season the ribs, cover with foil, and roast at 160°C for 2.5-3 hours. For a crispy finish, remove the foil and roast at 220°C for an additional 10-15 minutes.

As explained in the description, there’s a significant amount of meat and fat above the ribs. I smoked these with hickory and apple at 250F for ~8 hours with a solid layer of Memphis Dust rubbed on.
Came out very well, but buyer beware of exactly what these are. The piece of meat that arrived could feed atleast 8 hungry people, so don’t go ordering multiple slabs without understanding how much meat is involved!

These are the best ribs i have ever cooked. Lovely sweet meat from the pork with very little fat.
Basted with Frenchies mustard and a dry rub.
Cooked on a bbq until internal temperature of 63c. I then wrapped the ribs in tin foil with some apple juice until the internal temperature reached 93c.
Glazed with a bbq sauce to finnish. The meat fell off the bone !
