Cooking Tips:

The quality of the meat was unbelieveable. I bought these to smoke and did them 3-2-1. They were good but they weren’t St.Louis cut ribs as one might expect. I’d buy them again for the quality but probably not for smoking for ribs and wings night, I’d probably get baby back or spare ribs without the belly.
Can you do these with the belly removed separate from the ribs? That would be the best of all worlds and really good value!

Know what you’re getting – read the description. These are ribs, with belly pork above and a layer of fat, so a massive hunk of meat, not exactly the traditional cut of ribs you see being smoked by US YouTubers, but more meat. So you have a hunk of belly pork to cut down into and enjoy, then the layer of ribs to look forward to. All very delicious.
