We’ve specially selected this cut for those who wish to make old fashioned bacon at home. We choose the fattest pork that we have available, although this varies from breed to breed. The middle illustrated is 19mm and from a Welsh pig.

This is the loin and belly in one piece for making middle bacon or Ayrshire bacon. If you wish you could cure it in one piece and then cut it to have back and streaky or cut it first and do two separate cures of back and streaky

    This is a repeat order and once again the fat to lean ratio is perfect. This time I will cure this and roll it. Last time I smoked it as well. The taste from previous cures has been a blast from the past with the bacon having the full on taste we used to get before they started injecting bacon with gunk. If you are going to cure bacon you might as well as get the best pork you can and this is it.

    Fantastic piece of pork. Initially planned to cure and smoke as one piece, but realised I wouldn’t be able to slice it without a machine. So ended up cutting it into two pieces of streaky and two of back bacon. Wonderful fat under the skin and in between the muscle. Just drying now after curing half in maple and half in bay leaf and juniper. Will oak smoke. Looking forward to trying when it’s done.
