Outlaw Gin Cured Smoked Pancetta – 500g

Air dried pancetta, cured with York Gin botanicals.

We take selected cuts of our rare breed pork belly and cure it with sea salt and gin botanicals. Then rinse it, allow it to dry and lightly smoke it at The Holy Smokery. After this it is air dried to intensify the flavour.

The botanicals are taken from the stills at York Gin when they are making batches of their Outlaw gin. We find that the blend of spices work perfectly with our pork.

This is a semi-dried pancetta. It needs to be cooked before eating, like bacon. Try it sliced and cooked or cut into lardons to enhance the flavour of your culinary creations.
