I have made cured brisket in the past using the beef cure from Weschenfelder and it’s never too salty. This was too much for me. Not sure how the smoke was added, could have been liquid smoke added to the cure. I am not sure this added to the experience for me. Apologies for sounding so negative I am sure many will love it.

This didn’t taste like any corned beef I’d ever had before, and my memory goes back a long way. It wasn’t unpleasant, but rather salty and more like pulled ham. Quite hard to carve too.

At last, a truly delicious corned beef. I bought 2 x 200g packs and will have to quadruple that order monthly. It is now on my essential supplies list, it is so versatile. The meat itself is clearly very good quality, with a subtle smoking that distinguishes it. It is a real treat.
