This is bacon as it used to be — slowly dry-cured by hand using only the essential ingredients: natural sea salt and dark muscovado sugar. No nitrates. No artificial preservatives. Just time, care, and proper pork from native breed pigs raised here in Yorkshire.
Because it’s free from nitrates, you’ll notice a difference in the colour. It doesn’t have that bright pink hue you’ll find in most commercial bacon — instead, the meat takes on a more natural tone after curing, with deeper, earthy colours that reflect the honest process behind it. When cooked, it crisps and caramelises beautifully, with the muscovado sugar adding a subtle richness and depth of flavour that you won’t find in standard rashers.
The texture is firm and satisfying, with a clean, porky flavour that doesn’t rely on chemical enhancement. It smells incredible as soon as it hits the pan. Whether you’re building the perfect bacon sandwich or serving it alongside soft eggs and sourdough, this is the kind of bacon that makes you sit up and pay attention.
Every batch is made in small quantities by Mount Grace Charcuterie, just a few miles from where the pigs are reared. It’s proper Yorkshire bacon, cured with integrity and full of real flavour.
