This cut is ideal for making pulled pork. The bone is left in to help with cooking and flavour. Should be cooked slowly in a moderate oven until the meat fall away from the bone.

Just cooked this today. Slow roasted in the oven with paprika, cumin, sugar, salt and black pepper and cooked in cider. Finished off with a spoonful of bbq sauce in the stock and basted the pulled pork. It was the best I’ve eaten in a long long while. The bone keeps the pork so tender. Fantastic.
