Our Native Breed Rump Roast is a true celebration of British cattle heritage, cut from grass-fed, slow-reared animals raised on small, sustainable farms. We use only traditional native breeds like Hereford, Dexter, or Belted Galloway, known for their excellent marbling and unbeatable depth of flavour.
About the Cut
The rump comes from the hindquarter, where the balance of lean muscle and a fine covering of fat combine to give you a tender, succulent roast with plenty of beefy character. We hand-trim and tie each joint to keep its shape during roasting, leaving just enough fat on top to baste and protect the meat as it cooks.
Cooking Methods
Best roasted medium-rare to medium, this joint shines when cooked at a high heat for the first 20 minutes to create a crust, then finished more gently to keep it pink and juicy inside. Rest it well before carving thinly against the grain. It’s also excellent cooked over charcoal for a smoky edge.
