Our Centre Cut Fillet is the crown jewel of the beef world — a premium, ultra-tender cut taken from the very heart of the fillet. This is the portion prized by chefs for its buttery texture, lean profile, and delicate flavour, with just enough marbling to keep it succulent.
Sourced from native breed cattle raised on small farms in North Yorkshire, our fillets are naturally slow-grown on grass-rich pastures, resulting in exceptional flavour and tenderness. Each fillet is expertly hand-trimmed by our butchers to leave only the finest, evenly shaped centre section — perfect for roasting whole or portioning into luxurious fillet steaks.
Dry-aged in Himalayan rock salt for a minimum of 28 days, this cut develops a richer, deeper beef flavour while retaining the melt-in-the-mouth tenderness that makes fillet so sought after.

Arrived on time. Ended up having to freeze as initial plans got cancelled due to COVID. Was worried the taste would be impacted but wasn’t the case. The herbs for roasting included was a nice touch.

The fillet steak practically melts in your mouth and the flavour is wonderful. My only gripe is that the price has increased over each of my last 3 purchases. It is becoming difficult to convince myself that at £60 per kilo it is so much better than Waitrose at £40 per kilo! Any chance that the price could be reduced sat all??
