Description
Mount Grace Coffee & Chilli Bresaola – Intensity with a Northern Edge
Sourcing:
Produced by Mount Grace Charcuterie, this bresaola is made from native-breed beef reared on small farms in North Yorkshire. The emphasis on slow, sustainable farming ensures beef with robust flavour and lean texture, perfect for curing.
About the Cut:
The cut of choice is the silverside (or topside) – lean, evenly grained, and naturally suited to air drying. Its texture becomes tender during curing, with no excess fat, allowing the spice blend to shine.
Curing & Flavour:
The beef is cured with a mix of salt, spices, roasted coffee, and chilli before being slowly air-dried. Over several weeks, the beef absorbs the earthy depth of the coffee and the subtle heat of chilli, creating a layered profile:
-
Coffee adds roasted, slightly bitter notes that enhance the beef’s natural richness.
-
Chilli brings warmth rather than overpowering heat, lingering gently on the palate.
-
Together they create a charcuterie with both savoury complexity and a modern twist.
Serving Suggestions:
-
Serve thin slices with aged cheeses and a drizzle of honey to highlight the coffee notes.
-
Pair with roasted nuts and olives on a charcuterie board.
-
Layer into sourdough sandwiches with rocket and creamy cheese.
-
Enjoy alongside a dark stout, porter, or rich red wine to echo the roasted coffee flavours.
Nutritional Value:
Like traditional bresaola, it’s lean, high in protein, and rich in iron, with the added antioxidant properties of chilli.
Health Benefits:
-
Low in fat but high in protein, supporting muscle recovery.
-
Coffee and chilli bring additional plant compounds with antioxidant effects.
-
Naturally gluten-free, with no artificial additives.
