Made by Mount Grace Charcuterie in North Yorkshire, this air-dried beef takes traditional bresaola to new heights. Infused with roasted coffee and chilli, it balances deep, earthy bitterness with a gentle warmth, complementing the natural sweetness of native-breed beef.

Produced by Mount Grace Charcuterie, this bresaola is made from native-breed beef reared on small farms in North Yorkshire. The emphasis on slow, sustainable farming ensures beef with robust flavour and lean texture, perfect for curing.

About the Cut:
The cut of choice is the silverside (or topside) – lean, evenly grained, and naturally suited to air drying. Its texture becomes tender during curing, with no excess fat, allowing the spice blend to shine.

Curing & Flavour:
The beef is cured with a mix of salt, spices, roasted coffee, and chilli before being slowly air-dried. Over several weeks, the beef absorbs the earthy depth of the coffee and the subtle heat of chilli, creating a layered profile:

  • Coffee adds roasted, slightly bitter notes that enhance the beef’s natural richness.

  • Chilli brings warmth rather than overpowering heat, lingering gently on the palate.

  • Together they create a charcuterie with both savoury complexity and a modern twist.

Serving Suggestions:

  • Serve thin slices with aged cheeses and a drizzle of honey to highlight the coffee notes.

  • Pair with roasted nuts and olives on a charcuterie board.

We prepare your order in our butchery on the day before delivery to ensure that everything reaches you in the best condition.

We deliver on a next day service throughout the UK mainland (please see below for restrictions). Your order is shipped in an insulated box.

Our delivery service allows you to pick a delivery date in advance when you reach the checkout. Our delivery days are Tuesday to Friday.

We use a courier service. They will notify you on the morning of delivery with an estimated time for delivery.

Delivery is free on orders over £50. (under £50 = £12.95) Sorry This is due to the cost involved in our chilled packaging and courier cost.
