This traditional joint from our well-aged Yorkshire mutton is perfect for slow roasts, braises, or pulled dishes full of rich, meaty depth.
Taken from the lower part of the hind leg, the shank end is packed with connective tissue and flavour – the kind of cut that rewards long, slow cooking. Our mutton comes from mature sheep raised on North Yorkshire pasture, producing meat with real character and a beautiful, natural fat covering.

The shank end of the leg is a classic joint for those who love slow-cooked dishes that are full of depth and satisfaction. It’s taken from the lower hind leg of our Yorkshire mutton – meat from slightly older animals that have been allowed to mature naturally on grass. These sheep graze on North Yorkshire pastures and are selected at just the right stage, where the muscle has developed flavour and the fat cover is well-formed without being excessive. After slaughter, the meat is hung and dry-aged to bring out its full potential.
This cut has plenty of connective tissue and a marrow-rich bone that transforms beautifully during cooking, adding richness and body to the meat and any juices or gravies. The result is a joint that responds brilliantly to long, slow roasting or braising. It’s just as at home simmered in stock or wine as it is finished in the oven with root vegetables and herbs. The meat softens to the point of falling from the bone, delivering that unctuous, deeply satisfying texture and flavour you only get with proper mutton.
