Our nitrate-free back bacon is traditionally dry-cured in small batches by Mount Grace Charcuterie using just muscovado sugar and natural sea salt—no nitrates, no preservatives, just the essentials. The muscovado brings a gentle molasses sweetness that balances beautifully with the salt, enhancing the natural flavour of the pork without overpowering it.
Sliced from the loin of rare and native breed pigs raised in Yorkshire, this bacon is lean, meaty, and richly satisfying. It crisps up beautifully in the pan, delivering a deep, honest flavour that harks back to old-fashioned farmhouse curing methods—clean, simple, and full of character.

This is bacon as it used to be — slowly dry-cured by hand using only the essential ingredients: natural sea salt and dark muscovado sugar. No nitrates. No artificial preservatives. Just time, care, and proper pork from native breed pigs raised here in Yorkshire.
Because it’s free from nitrates, you’ll notice a difference in the colour. It doesn’t have that bright pink hue you’ll find in most commercial bacon — instead, the meat takes on a more natural tone after curing, with deeper, earthy colours that reflect the honest process behind it. When cooked, it crisps and caramelises beautifully, with the muscovado sugar adding a subtle richness and depth of flavour that you won’t find in standard rashers.
The texture is firm and satisfying, with a clean, porky flavour that doesn’t rely on chemical enhancement. It smells incredible as soon as it hits the pan. We deliver on a next day service throughout the UK mainland (please see below for restrictions). Your order is shipped in an insulated box.
Our delivery service allows you to pick a delivery date in advance when you reach the checkout. Our delivery days are Tuesday to Friday.
We use a courier service. They will notify you on the morning of delivery with an estimated time for delivery.
