INGREDIENTS
  • 1 kg diced lamb
  • 2 tbsp olive oil

  • 1 tbsp tomato paste
  • 1 tsp honey
  • Salt and pepper, to taste

METHOD

  1. Brown the Lamb: In a large pot, heat the olive oil over medium-high heat. Add the diced lamb in batches and brown all sides. Remove the lamb and set aside.
  2. Sauté Aromatics: In the same pot, add a bit more oil if needed and sauté the onions until they're soft and golden. Add the garlic and cook for another minute.
  3. Add Spices: Stir in the cumin, coriander, cinnamon, cayenne pepper, smoked paprika, and turmeric. Cook for a minute until the spices are fragrant.
  4. Combine Ingredients: Return the lamb to the pot. Add the chopped tomatoes, stock, tomato paste, and honey. Stir well to combine.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the lamb is tender.
  6. Finish: Adjust the seasoning with salt and pepper. Add the lemon juice and garnish with fresh coriander.
  7. Serve: Serve hot with your choice of side.
