This Roast Boneless Chicken Thigh Traybake is a simple, fuss-free meal that’s packed with vibrant flavours. INGREDIENTS
  • 4 boneless, chicken thighs
  • 500g baby potatoes, halved
  • 3 carrots, peeled and sliced into chunks
  • 1 red bell pepper, cut into thick strips
  • 1 red onion, cut into wedges
  • 4 garlic cloves, left whole and unpeeled
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1½ tsp dried thyme (or 3 sprigs fresh thyme)
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Zest of 1 lemon
  • Juice of ½ lemon
  • Optional: a handful of fresh parsley, chopped, for garnish
METHOD

  • Preheat the oven to 200°C (180°C fan)/Gas Mark 6.
  • In a large roasting tin, arrange the baby potatoes, carrots, red pepper, red onion, and garlic cloves. Drizzle with 2 tbsp olive oil and season with half the paprika, thyme, oregano, salt, and black pepper. Toss to coat evenly.
  • Rub the boneless chicken thighs with the remaining olive oil and season with the remaining paprika, thyme, oregano, salt, and pepper.
  • Lay the chicken thighs on top of the vegetables in the roasting tin. Sprinkle the lemon zest over the chicken and vegetables.
  • Roast in the oven for 35–40 minutes, turning the vegetables halfway through cooking. The chicken should be cooked through (internal temperature 75°C) and slightly golden.
  • Squeeze lemon juice over the chicken and vegetables before serving. Garnish with fresh parsley if desired.
