Leg of Mutton

Leg is a traditional roasting cut with relatively lean, firm meat and a distinctive, savoury flavour. It works particularly well when roasted gently, allowing the meat to become tender without drying out. Choose a whole leg for a larger gathering or a half leg for a smaller roast.

Mutton Shoulder

Shoulder contains more connective tissue and intramuscular fat than leg, making it especially suitable for long, slow cooking. As the joint cooks, the connective tissue softens, producing tender, succulent meat and rich cooking juices.

How to cook a mutton roasting joint

Mutton benefits from patient cooking. Unlike young lamb, the meat comes from an older animal and generally has a firmer texture and more developed flavour.

For traditional roasting, season with rosemary, garlic, salt and black pepper, then cook gently until the meat reaches the tenderness you prefer. Shoulder is particularly suited to slow roasting in a covered roasting dish, while leg can be roasted for carving or cooked longer for a softer texture.

Mutton also works beautifully with warming spices, red wine, root vegetables and herbs.
