This is a shoulder of mutton joint cut by our butchers from the blade end (top) of the shoulder. Perfect for slow cooking with bags of flavour and a perfect texture.

Slow roasted with just a light coating of seasoned flour very nice indeed. Succulent and tender, excellent texture with very little cooking loss. LIghter colour and less intense than the previous example we had, this was more like hogget than fully mature mutton, but still very good indeed.

Never tasted mutton before: marinated (and cooked) in a Gymkhana tandoori marinade on a bed of chickpeas; cooked for a short burst at higher temperature then wrapped in parchment and foil and cooked at low temperature for 5 hours: delicious and an impressive sight

Roasted this shoulder for two hours in a covered roasting tray, then turned heat up for final 30 mins and removed the covering. Results were absolutely superb. Will be re-ordering
