These are whole breast fillets from wild pheasants shot on local North Yorkshire estates.
Pheasant is a wild bird with a subtle, gamey flavour and even though it is commonly associated with Christmas, we usually have it from October until February. Wild pheasant makes an interesting change to chicken and the breasts can be pan fried or, cooking sous vide guarantees a moist, tender result.
