Our Whole Bone-In Leg of Yorkshire Lamb is a showcase of traditional British farming at its very best. Raised on the rolling pastures of North Yorkshire, these lambs graze freely on nutrient-rich grasses and wild herbs, developing a flavour that is naturally sweet, delicately gamey, and unmistakably “proper” Yorkshire. The leg is left on the bone for good reason. Cooking with the bone in helps the meat retain its natural juices and adds depth to the flavour that simply can’t be replicated in a boneless joint. The generous covering of fat and firm, creamy-white outer layer renders down beautifully during roasting, basting the meat from within and keeping every slice tender and moist.
